Raisin Chocolate Vanilla Muffin

With the recent oil price hikes, I have to put more affort to make sure that my family are adequately feed without relying on food bought from school canteen. Here is the light snack that get stuffed into my childrens' snack pack.

Ingredients:
250gm cake flour (all purpose flour would do)
18gm baking powder
150ml fresh milk
125ml corn oil
125gm sugar
50gm raisin
50 gm chocolate chips
3 eggs
½ tsp vanilla essence
a pinch of salt

Method:
Sift together flour, baking powder, and salt.
Cream butter and sugar until light and fluffy.
Beat in eggs, one at a time, beating after each addition.
Add the dry ingredients followed by milk and corn oil. Stir until just moistened.
Finally add raisins and chocolate chips.
Spoon muffin batter into prepared muffin cups or liners.
Bake at 200C for 17 minutes or until done.
